Italian Sausage Lasagna Soup

I love a good bowl of coup - especially one that just makes me want to curl up in a warm blanket and savor every bite. So of course, I had to try the Lasagna Soup trend with my own twist! In this recipe, I used spicy Italian sausage for an extra kick, and in my opinion it goes so well with the ricotta cheese! Hope you love every bite!

Serves: 2-4

Cooking Method: Stovetop (cast iron pot or large soup pot)

Ingredients:

  • 3-4 Links Spicy Italian Sausage (casings removed)

    • Pro Tip: I like Spicy Italian Sausage because it’s already so spicy and flavorful. One less step to do in the cooking process!

  • 2 TBSP Garlic

  • 1 TSP Red Pepper Flakes

  • 2-3 TBSP Tomato Paste

  • 1/2 - 1 Jar of Marinara Sauce (I like Rao’s)

  • 1-2, 32 oz. Box of Chicken Broth

  • Lasagna Noodles, broken into pieces

  • 1/4 - 1/2 cup Ricotta Cheese

  • Parmesan Cheese to garnish

  • Fresh chopped parsley to garnish

Instructions:

  • Remove sausages from casings and add to heated pot

  • Break apart and cook through

  • Add in garlic and pepper flakes and cook until fragrant (about 2 minutes)

  • Add in tomato paste and cook/coat the meat until caramelized

  • Add in your marinara sauce and chicken broth. Bring to a slow boil

    • Pro Tip: I start with about 1/2 can of marinara, and about 1-1.5 boxes of chicken broth. When you add the noodles in the next step, they will expand and absorb the liquid! If you feel like you need more, or you like your soup with more broth, you can always add more!

  • Break apart your lasagna noodles into smaller, bite sized pieces and add to your pot. Simmer until noodles are cooked through (about 15 minutes).

  • Add in your ricotta cheese and stir until it’s evenly spread throughout the soup - this will thicken it up and make it creamy!

  • Serve in a bowl, and top with parmesan and fresh cut parsley. If you’re a ricotta lover like me, add in an extra dollop!
