Tequila Lime Skirt Steak Tacos

Taco Tuesday happens pretty much every week in our household. This rendition was so tender and full of flavor! Plus, as a tequila lover, I’m partial to this recipe. A great excuse to have have a margarita along side some tacos!

Serves: 2-4 (depends on meat size)

Cooking Method: Stovetop (cast iron)

Ingredients:

  • Skirt Steak 1-2 lbs

  • 1-2 TBSP Olive Oil

  • 2-4 TBSP Tequila Lime Seasoning (I like Kinders!)

  • 1 TBSP Cumin

  • 1 TBSP Paprika

  • 1 TBSP Minced Garlic

  • 2-3 TBSP Diced Jalapeños (optional)

  • Juice from 1 Lime

  • 1.5 OZ Tequila (I like Teremana Blanco)

  • Taco Builders: corn tortillas, cheese, black beans, cilantro, La Victoria green sauce

Instructions:

Pro Tip: Some of us have smaller cast iron pans - cut your meat in half if needed!

  • In a large bowl or plate, drizzle and rub in your olive oil on to your skirt steak

  • Generously season and rub in your Tequila Lime Seasoning to the meat

    • Pro Tip: I love everything Kinders - their Tequila Lime Seasoning is the best! Another option I like is the Trader Joe’s Chili Lime Seasoning, it’s a bit more tangy in comparison!

  • Season and rub in the garlic, cumin and paprika to your meat

  • Optional - finely dice your jalapeños and mix in to the meat

  • Cut your lime in half and squeeezzeeee all that juice out, covering the meat

  • Add your tequila over the meat. I like Teremana Blanco because the citrus notes of the tequila pairs perfectly with the Kinders seasoning and lime juice. This also keeps the meat extra tender!

  • Once your meat is seasoned, I recommend letting it marinate for at least 30 minutes. BUT if you’re in a time crunch, you can go straight to cooking!

  • Heat up your oiled cast iron pan, and add the skirt steak. Flip after about 7 minutes, and cook until desired - I like mine medium, which took about 10-14 minutes total.

  • Remove skirt steak and let rest for about 5 minutes

  • While meat is resting, heat up your corn tortillas in the same cast iron pan! The juice and oil from the meat, with the charred flavor gives the tortillas an extra boost!

  • Slice meat in to thin strips, cutting against the grain

  • Assemble your tacos! I love keeping mine simple with just adding the meat, chopped cilantro, cheese and green sauce from La Victoria - a nice, mild sauce that doesn’t overpower the flavor from the meat.
