Sweet & Spicy Thai Chicken Nuggets
A healthy take on chicken nuggets! The Thai chili sauce paired with crispy chicken is sweet & savory all in one bite. Plus for all my gluten free friends out there - this one’s for you! Serve with sweet potato fries, a salad, or a veggie for a great overall meal.

Cooking Method: Stovetop and Oven
Ingredients for Chicken:
2 Chicken Breasts, Cubed 1 Inch
1 TSP Minced Garlic
1 TSP Paprika
Slat & Pepper to taste
About 4 Cups Corn Flakes
This will be added with additional 1 TBSP each of paprika, garlic powder, onion powder. Salt & Pepper to taste.
2-3 Eggs (depending on size)
2 TBSP Frank’s Hot Sauce (or Buffalo Sauce of your choosing)
Ingredients for Sweet & Spicy Thai Chili Sauce
1/4 Cup Sweet Thai Chili Sauce (Any will do! I like Trader Joe’s or Mae Ploy)
2 TBSP Butter
2 TBSP Honey
2 TBSP Sriracha Sauce
1 TBSP White Rice Vinegar
1 TSP Red Pepper Flakes
1 TSP Cayenne
Instructions for Chicken:
Cut chicken breast in to 1 inch cubes
Season with minced garlic, paprika, salt & pepper
In a separate shallow bowl, beat eggs with Frank’s Hot Sauce
In a large bag, combine Corn Flakes with paprika, garlic powder, onion powder, salt & pepper.
Crush up those Corn Flakes! (I like to leave a few large chunks in there!) Place mixture on to a place or shallow bowl.
Dredge your chicken cubes through the egg & hot sauce mixture. Then through the Corn Flake mixture - make sure they’re totally covered! (Pro Tip: Only do one or a few pieces at a time - this keeps your corn flake mixture from getting too soggy, and overall easier to work with!)
Place chicken on to an oiled pan
Once all of the chicken is on the pan - spray or lightly brush oil over all pieces
Cook at 425* for 15 Minutes. Flip pieces over and cook for another 5-8 minutes or until chicken is done.
Instructions for Sauce:
In a shallow pan, melt butter. Add honey and stir until the consistency has thinned.
Add Sriracha Sauce, red pepper flakes and cayenne
Add Sweet Thai Chili Sauce and white rice vinegar
Gently whisk until simmering and sauce starts to thicken
Pour over your chicken and enjoy!
